Smoked Salmon with Horseradish Cream
Smoked salmon works beautifully for entertaining, from holiday brunches to evening starters. If you have out-of-towners visiting, fish from Pike Place Market has to be on the table! Purchase smoked salmon, and this takes 5 minutes start to finish.
Whisk together 1 cup heavy cream, 3 Tbsp bottled horseradish, 2 tsp Dijon mustard and a pinch of black pepper to taste, until thick and holding soft peaks. (Make ahead 1 hour in advance and chill. Or use a whipped cream canister, and you won't have to worry about it losing its shape.) Serve on the side with 1 lb smoked salmon. Garnish with sliced lemon and cucumber if desired and serve with your favorite crackers.
