BLUEBERRY-PEACH COBBLER from the Pike Place Market Cookbook by Braiden Rex-Johnson
This is a magical dessert. The dough begins at the bottom of the casserole dish and travels to the top during baking. This bubbling-hot fruit cobbler is so good it doesn’t need a topping. Serves 6 - 8
½ cup butter or margarine
1 cup flour
¾ cup sugar
2 teaspoons baking powder
½ cup milk
2 cups sliced peaches
1 ½ to 2 cups blueberries
½ cup sugar
1. Preheat oven to 350 degrees F. Get out a 2 ½ quart baking dish.
2. While the oven preheats, melt butter in the baking dish in the oven, and set aside. Combine flour, the ¾ cup sugar, and baking powder; add milk and stir just until blended. Spoon batter over butter in baking dish, but do not stir.
3. Combine fruit and the ½ cup sugar. Spoon over batter, but do not stir. Bake until fruit is bubbly and crust is golden brown, 45 to 55 minutes. Serve warm.
