1 tablespoon extra virgin olive oil
1 tablespoon harissa seasoning
1 teaspoon water
½ eggplant, sliced
2 zucchinis, sliced lengthwise
½ red onion, cut into wedges
½ yellow bell pepper, sliced thin
½ red bell pepper, sliced thin
2 tomatoes, quartered
1. Mix the olive oil, harissa seasoning, and water. This will make a paste.
2. Toss the vegetables in the harissa seasoning paste.
3. Cook in a grill basket on a hot grill for 15 minutes or until vegetables are cooked to your liking.
