Sweet corn is at Pike Place Market farmers markets, fresh from our farmers’ fields! Put a twist on a summer favorite by creating a modern (and easy) succotash.
Modern Succotash Recipe
Step 1: Sauté corn kernels (scraped from the cob with a knife) with edamame thawed from the freezer and cherry tomato halves in a little butter and olive oil.
Step 2: Season with fresh thyme and oregano for a Mediterranean flavor or ginger and jalapeno for an Asian flavor (if using ginger, add to the pan with the vegetables at the beginning, so it has time to soften).
Enjoy with a WA wine or fresh bread from the Market’s many wine shops or bakeries!
