Northwest Tastings: Local Wine, Meat and Chocolate in One Spectacular Pike Place Market Setting

At Northwest Tastings, beautiful wood-paned windows offer amazing views of Elliott Bay by day, and the lights of the Seattle waterfront, ferries and the Great Wheel by night. Located on Pike Place Market’s Lower Level 5 (just down the ramp from Uli’s Sausage, next to the Miniature Car Dealership), Northwest Tastings is a collaboration between three local artisanal producersSoulever Chocolates, White Heron Cellars and Glondo's Sausage Coas well as rotating offerings from local cheesemakers.

Soulever Chocolates is the creation of Aimee Morrow, who specializes in vegan and dairy-free chocolates. Exploring her love of cooking, Aimee experimented with chocolate recipes, focusing on dairy-free creations to accommodate her own dairy allergy. Her flavors focus more on the savory side, using herbs and spices, and she keeps sugar content low by using a low glycemic sweetener. Aimee started selling her chocolates in 2013 at local farmers markets, which is how she met Cameron Fries of White Heron Cellars.

White Heron Cellars, owned by Cameron and Phyllis Fries, has been located in the rural North Central Washington overlooking the Columbia River since 1986. Prior to starting their vineyard, the couple lived in Switzerland for five years, where Cameron studied the art of winemaking. When the Fries returned to the states, they carried with them a European influence that is evident in the style of White Heron’s wines. Every August, the Fries hold the Bread, Cheese and Cured Meat festival at their vineyard, and through that event, developed a friendship with the Glondo family who specialize in cured meats.

Glondo’s Sausage Co. has been a locally owned family business based out of Cle Elum since 1986. Dena Glondo’s parents started the business using family recipes, passed down from generation to generation. You’ll find hand-formed and tied meats hanging in the windows of Northwest Tastings, as well as charcuterie plates, including capocollo and dry salami (both of which pair well with red wine!).

Order wine by the glass or bottle, grab a seat at one of the glass-topped wine barrels or settle in to a seat at the window bar to soak in the beautiful views, and sample an amazing array of Washington’s flavors.
